Weyermann® Carafa® Special Type 3 is a dark-roasted specialty malt made from high-quality spring barley. Where malt-based bitterness is not desired, Weyermann® Carafa® Special Type 3 is a perfect fit. Weyermann® use a unique process where the husks are removed from carefully selected grains before malting and roasting them.
As the de-husked version of Carafa®, it produces rich colour, body, flavour and aroma without the harsh flavours and astringency typical of dark-coloured grains. Adds coffee-brown color, a coffee-like bouquet, dark beer aroma, as well as body and mouthfeel to finished beer but without introducing harsh flavors.

Produced from quality spring barley, the Carafa Special range is the de-husked version of Carafa. Weyermann use a unique process where the husks are removed from carefully selected grains before malting and roasting them. This reduces astringency and bitterness, while adding coffee-brown color, a coffee-like bouquet, dark beer aroma, as well as body and mouthfeel to finished beer but without introducing harsh flavors.
Even small amounts of Carafa Special malts in the grain bill produce dark beers of unusual smoothness and mildness, with a firm, creamy, white head. Flavor: notes of coffee, cocoa and dark chocolate.
